To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Place the listed items inside a pan, heat until it reaches a light boil, agitating to dissolve. Then, take off the heat and leave to reach room temperature completely. Decant to a sterilised bottle, cap it keeping it chilled, where it will keep for about one month.

To make Premix: Pour the specified spirits and syrup into one large bottle, let it rest for one hour, then filter it preferably using cheesecloth, making it completely strained.

When ready to serve: Add 85ml of your batch mix into your mixing glass containing ice, and agitate gently for a minute to cool it down. Pour into a frosted cocktail glass or equivalent, garnish with the cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
